The Glorieuses de Bresse

On the New Year Eve table, nothing compares to a Bresse capon with its silky flesh or a soft fattened chicken. To choose these exceptional products, most of the great chefs and enlightened connoisseurs would not miss for anything in the world, the famous Glorieuses de Bresse which are held in Ain every year.

Glorieuses de Bresse

One walks up and down the alleys of the markets of Montrevel, Bourg en Bresse and Pont de Vaux and it is already Christmas! The best of the Bresse capons, fattened chickens and all the poultry of Christmas or New Year’s Eve are enthroned there, closely wrapped up so that their flesh remains firm and so that they take on this elongated shape which characterizes them as much as the white plumage, blue legs and red crests which indicate their origin recognized by an AOC since 1936.

Great chefs rub shoulders with the public and, with their battle-hardened eyes; they track down the best ones and place an order. Those which will be awarded prizes by the jury and whose breeders will be given a supplementary plaque to put in the front wall of their farm.

Glorieuses de Bresse

All year long it is one of the charms of Bresse, these joyful farms, surrounded with rich meadows and wearing their trophies on the facade.

You should absolutely, at least once, go to the Glorieuses de Bresse. For the show, for the celebration before the end of year celebrations; to offer yourself the pleasure of choosing your poultry for the Christmas Eve table, and to meet the stars of Lyon and Rhône-Alpes cuisine in the bistrots after shopping in the market.

Having said that, if your head turns with such a spectacle and you choose nothing, it doesn’t matter, great regional poulterers will have done it for all the sophisticated gourmets. One can thus find the most beautiful poultry on their stalls and you can even buy them by mail-order. Happy holidays!
