The black, hard nougat is part of the thirteen Provencal desserts, but the white, soft, tender nougat, with honey, egg whites and almonds is the speciality of Montélimar. And what a speciality!
You absolutely must stop at the nougaterie, this factory where the oldest craftsman cook expresses his talent. You will be magnificently welcomed and will be invited to taste samples of nougat each one more delicious than the other.
After the visit which lets you admire the difficult work of nougat (almost impossible to reproduce oneself), with the aromas of honey and burned almonds and the clouds of sugar, one can settle down in the tearoom and investigate the shop, with its calissons, its coated dried fruits, pralines made in the traditional way and pastel marshmallows set into a fairground carriage.
Nougat of any size is mainly made with candied fruits, almonds and pistachio nuts, but the Soubeyran sweet shop also proposes nougat with figs and sweet chestnut from the Ardèche.
Although an old and traditional house, Soubeyran regularly proposes novelties. All the more reason to stop there!
