It is Jean-Michel Bouvier’s peasant recipe such as it is served at the Chalet Bouvier in Tignes.

Preparation

Fry the garlic in the butter without browning it. Add the fidès, let them colour, pour the chicken broth over and allow to cook 5 or 6 minutes on a slow heat.

Slices of bread and Beaufort

Cut large slices of bread, roast them in the butter and rub them slightly in the garlic, cover them with thin slices of Beaufort. At the last moment, put them in the oven so that the Beaufort melts.

Presentation

Put the fidès in a soup plate; cover them with the chicken broth. Arrange the very warm slices of bread with Beaufort on the top add a teaspoon of thick cream on the slices of bread and serve.
